Preparation

Start from frozen vegetables and cook to a minimum temperature of 75ºC (165ºF). Cooking time may vary depending on the type of appliance used. For best results, pierce vegetables with fork to check desired texture.Do not refreeze thawed product. If thawed, cook immediately.

Recommended cooking method :

For 1 bag:

Combi oven

1. Preheat the industrial oven (rational type) to reach 400°F/0% humidity.

2. Pour the content of the bag into a non-perforated cooking tray.

Add 2 ⅔ cups (550mL) of vegetable broth, mix well.

3. Cook 14 to 15 minutes*  or until the quinoa and vegetables have reached the desired texture and temperature. Stir well halfway through cooking to coat all the quinoa with broth.

4. Pour into a serving dish.

 

For 2 bags:

Combi oven

1. Preheat the industrial oven (rational type) to reach 400°F/0% humidity.

2. Pour the content of the bag into a non-perforated cooking tray.

Add 5 ⅓ cups (1250mL) of vegetable broth, mix well.

3. Cook 24 to 25 minutes*  or until the quinoa and vegetables have reached the desired texture and temperature. Stir well halfway through cooking to coat all the quinoa with broth.

4. Pour into a serving dish.

 

For 3 bags:

Combi oven

1. Preheat the industrial oven (rational type) to reach 400°F/0% humidity.

2. Pour the content of the bag into a non-perforated cooking tray.

Add 5 ½ cups (1280mL) of vegetable broth, mix well.

3. Cook 28 to 30 minutes*  or until the quinoa and vegetables have reached the desired texture and temperature. Stir well halfway through cooking to coat all the quinoa with broth.

4. Pour into a serving dish.

Alternative cooking method :

Combi oven : 

  1. Preheat the industrial oven (rational type) to reach 350°F/0% humidity.
  2. Pour the content of the bag into a non-perforated cooking tray.

Add 5 ½ cups (1280mL) of vegetable broth, mix well.

  1. Cook 32 to 35 minutes* or until the quinoa and vegetables have reached the desired texture and temperature. Stir well halfway through cooking to coat all the quinoa with broth.
